Remove leaves from 2 mint sprigs; slap leaves between your palms to release oils and divide between 2 wine glasses. Fill glasses with ice. Pour 2 oz. St-Germain, then 3 oz. prosecco into each glass. Top off with sparkling water and stir gently to combine. Garnish each cocktail with a lime wedge and a mint sprig.
